I am designing my interface on Illustrator but obviously, since every mobile has a different resolution, how do i add a background image to suit all devices. If that isn’t possible, how do I make my user interface stand out?

Making a background image beautiful for all devices is impossible by definition, because there are mobile devices with very small and very large screens (not to mention different resolutions).
In practice, they create several images for different resolutions. You need to decide for which devices you need a background and see what people recommend on the Internet about this.
