I noticed that in the Thunkable documentation for Apple IOS submissions, we need to describe IOS permissions. I do not see that option in Thunkable as in the picture, does this need to be entered somewhere else or ignored?

No, you definitely shouldn’t ignore them anyway as Apple will not accept your app.
The way permissions work at the moment is that, for example, if you have a Camera component in your project then there will be a Camera permission text box for you to fill in in your app settings.
